Recipe of the month: Yummy Snowballs

Ingredients

  • One Package of Vienna biscuit base (Wiener Boden)
  • 60 g Amarettini
    (almond-liquor flavoured biscuits)
  • 10 g cocoa (powder)
  • 25 g sugar
  • 75 ml cherry juice
  • Powdered sugar

Crush the Amarettini with a rolling pin. This works best if you put the Amarettini into a plastic food bag to avoid spreading crumbles all over. Next you break the Vienna biscuit base into small pieces and mix it with the Amarettini crumbles. Blend the sugar with the cocoa and the cherry juice until the sugar has dissolved completely, then mix everything with the Amarettini. Form small balls and roll them in powdered sugar to make them look like snowballs. If you keep them in a tin, the balls stay fresh for about one week.

Malcolm’s dragonlicious plum cake

Today chef Malcolm wants to show you a very simple recipe for plum cake. He’s got it from his dragon mum, and as everybody knows, mothers always have the best recipes. This cake is quickly made because the dough doesn’t need yeast.

And this is how it works:
Wash the plums and pick out the pits but leave the plums whole. Then mix the butter, sugar, eggs and salt until the dough gets fluffy. Stir in the rest of the ingredients. Now heat the oven to 170 to 190 °C (recirculating air 150 to 170 °C).

Fill the dough into a spring form with a diameter of 26 cm. Spread the plums circular on top, from the rim to the center, keeping them upright. Now you can put the cake into the oven and bake it for 40 to 50 minutes.

After baking, sprinkle the cake with sugar while it’s still the spring form. Then take off the ring of the form and let the cake cool down on a cooling rack. If you like, you can add fresh whipped cream when serving it… Yummy!

Mango-lime-honey-milkshake

When it’s hot weather outside in the summer, then there’s nothing better than a fresh cocktail. Especially when there’s so much fruit in it like in our recipe. Malcolm recommends to enjoy the milkshake well chilled. Hmmmmmm… delicious!

You need:
1 middle-sized mango
300 ml milk
1 organic lime – you need the juice and a bit of grated lime peel
30 g honey – you may take more or less, depending on your personal taste. Alternatively, you can exchange the honey for vanilla sugar.
These quantities are enough for about 1 to 2 portions, depending on the size of your glasses.

This is how you prepare the milkshake
Peel the mango and cut the pulp from the pit. Then cut the pulp to small pieces. It’s best if you get assistance from an adult for this. Next you put the pulp, the lime juice, grated peel, honey and of course the milk into a blender. Mix everything thoroughly until the shake thickens. Now fill it into glasses and sprinkle some grated lime peel on top for decoration if you like. Enjoy your milkshake!
